birthday travels


for nick's birthday, we took a day trip to st. michaels, maryland!  located on the eastern shore, st. michaels is a quiet fishing town only a short drive from washington.  we spent the day poking our heads in little shops on talbot street, indulging in local seafood, and discovering st. michaels winery.  we ended the day sailing out on the bay at sunset- a perfect weekend in my book!

sweet pork tacos with cilantro ranch dressing


i found this recipe from just cook already and it was a huge hit.  i layered tortillas {or tostadas} with mexican rice, sweet pork, lettuce, cilantro ranch dressing, and a little cheese {everything is better with cheese}.



ingredients:
2-3 pounds pork
3 cans coke {not diet}
1/4 cup brown sugar
dash of garlic salt 
1/4 cup water
1 can sliced green chilies
3/4 can enchilada sauce
1 cup brown sugar

directions:
put the pork in a heavy duty ziploc bag to marinade.  add about a can and a half of coke and about 1/4 cup brown sugar.  marinade for a few hours or overnight. drain marinade and put pork, 1/2 can coke, water, and garlic salt in crock pot on high for 3-4 hours {or until it shreds easily, but don't let it get too dry}.  remove pork from crock pot and drain any liquid left in the pot.  shred pork.  in a food processor or blender, blend 1/2 can coke, chilies, enchilada sauce and remaining brown sugar {about a cup, you can add a little more or less to taste}.  if it looks too thick, add more coke little by little.  put the shredded pork and sauce in crock pot and cook on low for 2 hours.  

cilantro ranch dressing

 ingredients:
1 cup salsa verde
1 package buttermilk ranch
1/3 cup cilantro
1/3 cup mayo
1/3 cup sour cream
1 teaspoon minced garlic
1/2 teaspoon salt
1 tablespoon fresh lime juice
1/4 teaspoon cumin
1/4 cup sugar

directions:
blend in blender until smooth.

{i used about 4 pounds of pork for a group of about 6-7, and the meat required about 2 more hours of cooking.  if the meat is still not tender enough for shredding and you're running low on time, pop the entire crock pot ceramic bowl, covered in foil, in the oven at about 400 until done}

cheers to summer!

and we kicked it off with the Kenny Chesney and Zac Brown Band concert, which was amazing.  awesome weekend with amazing friends in my soon to be hometown.  only a week left here at home until the big move!  the next few months will be dotted with packing, unpacking, traveling to the keys, grilling out, lake weekends, cold wine, more unpacking, rivah trips, and lots and lots of exploring in the big city.  its time to dive in, can't wait to see what this summer holds in store!

first summer meal

in the last few weeks i have at home before moving to the big city, one of my favorite things to do has been cook for family and friends. i am preparing our first summer meal for tomorrow night by prepping the meat  for these sweet pork tacos with cilantro and ranch dressing.  i can't wait to share the recipe {as long as all goes well}  sidenote : love our chalkboard wall at home, will definitely be re-creating this when i move
